This smoothie is sunshine in a glass. Pineapple and coconut combine to create a deliciously, creamy tropical drink. Pineapple is an excellent source of immune-boosting vitamin C and coconut contains medium-chain triglycerides which help to increase energy expenditure and the feeling of fullness after a meal. We’ve added cashews and chia seeds as they’re excellent source of heart healthy fats, and a pinch of turmeric for its anti-inflammatory properties.
Methods
1. Add all of the ingredients to a high speed blender and blend on high for approximately 45 seconds until creamy and smooth.
2. Pour into 2 glasses and enjoy, or store in the fridge for up to 48 hours.
