No date, no bake peanut butter & dark chocolate balls

These no-bake, 1 bowl, balls are perfect for a mid-afternoon pick me up and will keep you going till dinner. Peanut butter is a great source of protein and pairs well with dark chocolate which is a good source of antioxidant polyphenols. Instead of dates which are high in sugar, we’ve made the base of the balls out of oats as they’re rich in gut friendly fibre. We’ve included flaxseeds as their a good source of omega 3 fats which we don’t eat enough of in the UK. If you don’t like peanuts, you could also make this recipe with almond butter and almonds.

Methods

 

1. In a large mixing bowl, add the oats, chunks of dark chocolate, peanuts (these need to be chopped small otherwise the mix will find it hard to stick together), flaxseed and cinnamon, and mix it all together.

 

2. Add the peanut butter and honey, and give it a good stir until well combined.

 

3. Cover the bowl with cling film and place in the fridge for 15 minutes to firm up.

 

4. Remove the bowl from the fridge and roll the mix into 10-12 balls depending on what size you like them. The balls will keep in the fridge for 5 days or store them in the freezer for a quick and convenient snack when on the go.

100g old fashioned oats
50g 70% dark chocolate, chopped into chunks
2 tbsp dry roasted peanuts, finely chopped
3 tbsp flaxseed
1 tsp cinnamon
Pinch of sea salt (optional)
5 tbsp smooth peanut butter
3-4 tbsp honey (or maple syrup if you’re vegan)
