Tennis season is here and Wimbledon would not be the same without strawberries and cream. We have used in season strawberries and creamy almond milk to create a delicious and nutrient packed smoothie. The frozen banana and cashews help to create a thick and creamy smoothie and the lime and mint pair perfectly well with the strawberries.
Method
1. Place the fresh or frozen strawberries in a high-speed blender such as a Nutribullet. Freezing the strawberries helps to thicken the smoothie and ensure it’s instantly chilled but if you don’t have time to freeze them you can just add a handful of ice to the smoothie.
2. Add the frozen banana, almond milk, cashews, honey and vanilla extract to the blender. You can also add a squeeze of fresh lime juice and a couple of mint leaves.
3. Blend on high until smooth, you may need to add a little extra almond milk or water depending on how strong your blender is and how thick the smoothie is.
4. Pour into a glass and enjoy straight away with a paper or glass straw, or store in the fridge for a couple of days.

Ingredients
200g strawberries, fresh or frozen
1 small or half a large banana, peeled and frozen in chunks
400ml unsweetened almond milk
Small handful or 20g cashews
1 tsp runny honey
½ tsp vanilla extract
Optional:
Handful of ice cubes
Squeeze of lime
2 mint leaves
