10 minute little gem lettuce cups

After a long day at work and when it’s hot outside, the last things you want to do is spend hours in the kitchen. For a light and refreshing dinner that can be ready in less than 10 minutes, try these little gem lettuce cups. We’ve put together 3 delicious filling recipes that do not require any cooking, including a vegan, veggie and fish option.

Methods

 

1. Break the little gem lettuce into individual leaves, removing the outer ones, and give them a good rinse.

 

2. Combine the ingredients for each filling in 3 separate bowls.

 

3. Lay the leaves out onto a plate and top with the filling. Eat straight away or save for lunch the next day. If you have any leftover filling, store it in the fridge and use it for salads.

Ingredients

 

1 pack of little gem lettuce leaves

 

Prawn and mango:

100g cooked prawns
Half a mango, skinned, stoned and cut into small chunks
Half an avocado, skinned, stoned and cut into small chunks
Juice of half a lime
1 small red chilli, seeds removed and finely chopped
1 handful of coriander, finely chopped

 

Quinoa tabbouleh:

½ pack precooked quinoa or grain of choice
2 tbsp. flageolet beans, rinsed
50 parsley, finely chopped
25 mint leaves, finely chopped
8 cherry tomatoes, finely chopped
Juice of 1 lemon
Drizzle of extra virgin olive oil
Pinch of salt and pepper

 

Black bean and corn:

½ 400g tin of black beans, rinsed
½ 285g tin of sweetcorn
½ red pepper, cut into small chunks
Handful of coriander, finely chopped
2 spring onions, outer layers removed and finely sliced
Juice of half a lime
50g feta cheese, cut into cubes or crumbled
